There is a time to have tea on its own - to meditate, to relax; and there is a time, like today, when you just want to enjoy your tea, while watching a good movie or having a good conversation with your mom. You know what I mean? Unfortunately for us, while we were watching a movie (The Butler - have you seen it? If not, I highly recommend you do!) and sipping our black tea, my mom asked me if I could make something to go with it. Of course! I said, and soon went and whipped a batch of these lovely and irresistible French Butter cakes - La Madeleine. Of course, by the time I was done, it was no longer tea time. Tomorrow will be another day, as someone once said, and when tea time will come around, you can rest assured that we will be prepared and really enjoy ourselves. 

Until then, do try this easy and delicious recipe. I promise, you will come back for more, and so will your friends and family.

Note: Before you decide to make these cakes, you will need to purchase the appropriate baking pan, which you can order here.

French Butter Cakes ( La Madeleine)

Prep time: 35min
Bake time: 10min

1 2/3 cups (225g) flour
3/4 cups (175g) white granulated sugar
6 Tbsps + 2 tsp (100g)butter
1 Tbsp of baking powder
4 eggs
1 lime/lemon
pinch of salt
1 tsp vanilla extract


  1. In a large bowl, beat together the eggs and sugar until the sugar is all dissolved.
  2. Progressively add the flour, salt, baking powder, zest from the lime, lemon/lime juice, vanilla extract and melted butter to the egg mixture. Mix well.
  3. With a brush, spread butter on the pan and spread lightly with flour. You can also use a baking spray to prep your mold.
  4. Fill each mold with 1 teaspoon of dough. Let it rest for about 15-20min before baking at 428F (220C) for about 10 minutes.
  5. Remove from the oven once the cakes have risen and taken a golden color. Let them cool on the pan before unmolding.
