A couple of Sundays ago I was craving for some crêpes for breakfast, but I did not want to spend a lot of time making them since I had a lot of studying to do. This is when I decided to make myself some pancakes. One thing you should know about me, I am a pancake/crêpe snob. It has to be perfect. In the case of the pancake, it had to be fluffy, not gummy, not too sweet, perfectly cooked.  I remembered my mom's vinegar trick and decided to apply it to the pancake recipe. Result? They are to die for. My friends are all amazed by how tasty and flawless they are. The best part? They take less than 30 minute to make, and are perfect for all occasions.

Prep Time: 10 Minutes 
Cook Time: 10 Minutes 
Ready In: 25 Minutes 

3/4 cup milk 
2 tablespoons white vinegar 
1 cup all-purpose flour 
2 tablespoons white sugar 
1 teaspoon baking powder 
1/2 teaspoon baking soda 
1/2 teaspoon salt 
1 egg 
2 tablespoons butter, melted 
cooking spray 

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". 
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. 
Heat a small skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

The good thing about this recipe is that you can personalize it however you want it. I like to add blueberries to it, and/or instant plain oatmeal. If you decide to add oatmeal, use about 3/4 cups of flour and add to it between 1/4 and 1/2 cups of instant oats. This way you will have a complete breakfast. I also like to add pumpkin spice from time to time, but you can add cinnamon if that is what you prefer. Another variation is to add mashed ripe bananas to get banana pancakes. YUM!
